Cilantro Lime Shrimp

An easy to make dinner.  Few ingredients, a little  bit of prep, and one delicious shrimp dish.  This was great served with angel hair pasta with pecorino cheese & butter.  These shrimp are tail-on, because that’s what I had on hand.  You don’t have to leave the tails on, although no one seemed to mind.

  • 1 1/2 pound peeled shrimp
  • 2 tablespons olive oil
  • 1/2 cup bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 cup minced cilantra
  • 2 to tablespoons lime juice
  • salt & pepper

Make sure that shrimp are dry in order to get a good sear.  Heat olive oil in a large saucepan.  After 3 minutes, flip shimp.  Add garlic and bell pepper.  Cook 3 to 4 minutes more, being sure not to overcook.  Remove from heat and stir in the cilantro and lime juice.  Serves 4 to 6.
