Cucumbers in Sour Cream

A nice side salad that is a great accompaniment to a spicy meal, such as hot wings, chili, or a pepper jelly-glazed chicken or fish. I like with any grilled meat for it’s palate cleansing properties.

1 medium or 2 small cucumbers
Salt
Fresh or dried dill
2 to 3 tablespoons good sour cream

Peel cucumbers and slice very thin. Place cucumbers in bowl or colander, salting lightly each layer. Let rest for at least one hour.

After an hour or so, squeeze the cucumbers by hand or in a clean tea towel to remove remaining water. Do not rinse salt off as most of it drains away.

Add a little bit of dill, a 1/4 to 1/2 teaspoon of dried or 1 to 2 tablespoons fresh dill, f you have it. Add 2 to 3 tablespoons sour cream and fold gently to combine ingredients well.

Cool and refreshing, and ready to serve!

Let rest for one or two hours for flavors to meld.
