Winter Salad: Blackberries & Satsumas over Spinach

A lovely light lunch.  Trying to eat a little lighter after the holiday meals I’ve had, and the ones yet to come. This one really hit the spot.

I love to use satsumas in a salad during the winter months.  Paired with some (not local at all!) blackberries, this was a great lunch I was able to assemble at my desk.  The blackberries were a treat from the store.  I’m not sure how many miles they traveled to reach me, but they were really good for the end of December.

Everything was packed separate, and mixed just before serving.   I had a cup of bean soup with this, so, it was pretty filling.  You can assemble the salad at home, and just bring the dressing separate, too.

You will need:

2 cups baby spinach leaves
1 cup fresh blackberries
1 medium or 2 small satsumas
1/4 cup slivered red onions
2 tablespoons french vinaigrette
2 tablespoons chevre or feta

Combine all ingredients and enjoy!
