Leftover Mashed Potato Pancakes

A great way to use up leftover mashed potatoes.  Sometimes, it helps to make extra!  Great for breakfast, or as a dinner side.

  • 2 cups leftover mashed potatoes

  • 2 eggs

  • 1/4 cup flour

  • 1 green onion, sliced

  • 1/3 to 1/2 cup shredded parmesan or romano cheese

  • salt and pepper to taste

  • a few tablespoons milk, if needed

oil and/or butter, for frying

Combine all ingredients.  My leftover mashed potatoes were on the dry side, so I had to add a few tablespoons of milk to thin out the batter.

I added a little pepper, but no salt since the potatoes were already seasoned.  Plus the cheese adds some saltiness.

There are a variety of ways to use up these pancakes.  Smoked salmon and sour cream sounds pretty good, too.

Also, great for a special breakfast!
