An easy, easy method that produces delicious results, while allowing you to do something else while the veggies slowly roast and caramelize.
This was my clean out the fridge, roast all the veggies night!
Preheat the oven to 350 degrees.
Prep the veggies. It helps to get all the veggies a similar size.
Brush or toss with a little bit of olive oil, and season with salt and pepper and any other seasonings you wish. I like to use a peppercorn medley that also has a little bit of coriander in it.
After about 50 minutes in the oven:
Note, the foil helps in two ways. One, it helps make for an easy cleanup. Secondly, it actually helps provide with a better roast on the vegetables.
