Green Curry, from a box


Sometimes, you just want convenience.  These were on sale a while back, and I thought it would be a great way to a) have a dinner for myself, with enough leftovers for a work lunch.



The instructions are simple enough:

Heat the coconut milk,

Note: this is an 8-inch saucepan, so let that be your guide.  The box says it serves 5, which technically is true when you consider that a half cup of rice is a serving.  You may need more to serve a family.


Add the curry paste,


Add 2 cups or so of meat and vegetables ( used all veggies: onion, carrots, mushrooms, yellow squash, and baby spinach.  I did add the vegetables in stages, the toughest ones first and the spinach last of all.



Simmer for a few minutes.

Et voila!  Dinner is served.

Of course, this is not as good as my favorite Thai restaurant, but it was pretty good, and a lot cheaper.

Also, I did not use the rice in the box, but instead used my own rice.  It’s a Louisiana purple rice called Blanca Isabel purple rice.  Read more here –
