Homemade Jalapeno Cheddar Bratwurst

A friend of ours wants to learn how to make sausage.  If you, too, are new to sausage making, there are many books and many websites with recipes and tips on the sausage making process.  My tips on making sausage are here  https://icookforleftovers.wordpress.com/2013/09/01/how-to-make-homemade-sausage .  This is a recipe I wanted to try.

Homemade Jalapeno Cheddar Bratwurst

  • 2 1/2 pounds pork butt, cut into 1″ cubes
  • 1/4 cup seeded and minced jalapenos
  • 4 to 6 oz cheddar, grated or shredded
  • 1 tablespoon salt
  • 2 teaspoons sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon white pepper
  • 1/4 teaspoon mace
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon marjoram
  • water or beer
  • sausage casings

Sprinkle seasonings over cubed meat.  Mix seasonings into cubes.  Refrigerate for one hour.  Pass through grinder.  Return to freezer for 20 minutes. Set up stuffer.  Stuff casings.

Refrigerate overnight to allow flavors to meld, and freeze the next day.
